Hearty Autumn Harvest Oatmeal Cookies

These autumn harvest oatmeal cookies are super hearty with oats, nuts and lots of dried fruit. They are kind of a breakfast cookie meets dessert cookie because they are loaded with yummy mini chocolate chips. To make them *extra* festive, roll them in autumn colored sprinkles!

Autumn Harvest Oatmeal Cookies

Hearty fruit and nut cookies that are all dressed up for the harvest season!

Ingredients
  

  • 1 cup flour
  • 1 cup regular oats
  • 1 tsp salt
  • ¾ tsp baking powder
  • ½ tsp cinnamon
  • 2 sticks butter soft
  • ½ cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup chopped nuts
  • ¼ cup dried cranberries
  • ¼ cup dried dates diced
  • ¼ cup dried apricots diced
  • ½ cup mini chocolate chips
  • autumn sprinkles optional; for coating

Instructions
 

  • Beat butter and sugar until creamy then add eggs, one at a time, and vanilla
  • Mix flour and oats with salt, cinnamon and baking soda then slowly add to wet mixture
  • Scoop cookie dough out and roll into balls then roll in sprinkles
  • Place on baking sheet and refrigerate for ~30 minutes
  • Preheat oven to 375°F
  • Bake cookies for ~10 minutes, until edges start to brown
