Hearty Autumn Harvest Oatmeal Cookies
These autumn harvest oatmeal cookies are super hearty with oats, nuts and lots of dried fruit. They are kind of a breakfast cookie meets dessert cookie because they are loaded with yummy mini chocolate chips. To make them *extra* festive, roll them in autumn colored sprinkles!
Autumn Harvest Oatmeal Cookies
Hearty fruit and nut cookies that are all dressed up for the harvest season!
Ingredients
- 1 cup flour
- 1 cup regular oats
- 1 tsp salt
- ¾ tsp baking powder
- ½ tsp cinnamon
- 2 sticks butter soft
- ½ cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup chopped nuts
- ¼ cup dried cranberries
- ¼ cup dried dates diced
- ¼ cup dried apricots diced
- ½ cup mini chocolate chips
- autumn sprinkles optional; for coating
Instructions
- Beat butter and sugar until creamy then add eggs, one at a time, and vanilla
- Mix flour and oats with salt, cinnamon and baking soda then slowly add to wet mixture
- Scoop cookie dough out and roll into balls then roll in sprinkles
- Place on baking sheet and refrigerate for ~30 minutes
- Preheat oven to 375°F
- Bake cookies for ~10 minutes, until edges start to brown
