Bite Sized Brownie Muffins

I love everything about fall. The weather, the warm spices, the apple/pumpkin treats and when I was little, I LOVED the back to school season. There was just something so fun about all the new school supplies and getting to see my friends again after the summer break. My sister and I would always bring our lunches because our school lunches were gross (sorry, BSS, but it is true). The best part of homemade lunches – homemade desserts! Grandma Bray’s brownie muffins make THE perfect lunchbox dessert. These little cuties are brownies, but better. They are made in muffin tins so each brownie has a yummy crusty edge and a soft center! They are the perfect after-lunch treat that will satisfy your sweet tooth without making you too full for recess!

Brownie Muffins

Brownies made in muffin tins to make the most lunch friendly brownie ever.

Ingredients
  

  • 4 oz semi-sweet chocolate squares
  • 1 cup butter
  • 1 cup flour
  • cup sugar
  • 4 eggs
  • 1 tsp vanilla
  • ½ cup pecans optional

Instructions
 

  • Preheat oven to 325°F
  • Melt butter and chocolate together then fold in nuts
  • Blend flour, sugar, and salt in bowl and beat with spoon (don't use mixer)
  • Add eggs, one at a time, then add vanilla
  • Combine with chocolate mixture, stirring with spoon
  • Put in greased muffin tins until 2/3 full
  • Bake 30-35 minutes

Notes

if using unsalted butter, add 1/3 tsp salt
