25 Days of Cookies: Day 11

On the 11th day of the 25 Days of Cookies I bring you these healthy little gingerbread protein bites! These no bake cookies are made with vanilla protein powder, carrots and dates!

Gingerbread Protein Bites

Course Christmas Snack, Cookies
Cuisine 25 Days of Cookies
Servings 7 cookies

Ingredients
  

  • 12 dates
  • ¼ cup vanilla protein powder
  • 1 tbsp almond butter
  • 1 tsp maple syrup
  • 2 tbsp coconut flour
  • 1 large carrot peeled and roughly chopped
  • ½ tsp cinnamon
  • ¼ tsp ginger scant
  • small pinch of nutmeg
  • small pinch of allspice
  • small pinch cloves
  • splash of almond milk

Instructions
 

  • Combine all ingredients except almond milk in bowl and combine
  • When all ingredients are mixed together, add just enough milk to form a dough
  • Scoop out using cookie scoop and then refrigerate until firm
  • Transfer to storage container and store in fridge
