Air Fried Scotch Eggs
Lex and I went on a food tour in Savannah a couple of years ago and it was seriously one of the best times. At our last stop, we were introduced to scotch eggs. A scotch egg is a hard boiled egg coated in sausage and breadcrumbs, then deep fried. This was hands down my favorite treat from our entire food tour. This recipe is a significantly lightened up version of the traditional treat, using the air fryer and turkey sausage.
Scotch Eggs
Equipment
- air fryer
Ingredients
- 1 lb turkey sausage
- 6 hardboiled eggs
- 4 egg whites
- 1 tbsp water
- 2 cups panko
Instructions
- Preheat air fryer to 400°F for 15 minutes
- Coat eggs in turkey sausage
- Make egg wash by combining egg whites and water
- Dip eggs in egg white mixture then panko – I like to do this process twice so that they are extra coated
- Spray coated scotch eggs with cooking spray then air fry for about 6-8 minutes per side, until meat is cooked
