Cauliflower Crust Mini Pizzas
Happy Superbowl week, y’all! David LOVES sports, especially football, so the superbowl is a big occasion for him. While I am not super into the sports world, I am super into making appetizers (appies in our house). So, this week I am going to share some of my go-to appies for the big day! This cauliflower pizza crust pizza appie might just be my new favorite. It is super easy to make and you can make it on a small scale for those quarantine appie events. While this only makes four 4-inch pizzas, you can always double or triple the recipe for more guests!
Cauliflower Crust Mini Pizzas
Equipment
- 4 inch circular cookie cutter
Ingredients
- 1 10 oz bag steamable frozen cauliflower rice
- ¼ cup parmesan cheese
- 1 egg white
- ½ tsp Italian seasoning
- ½ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp kosher salt
- ⅛ tsp black pepper
- marinara sauce
- mozzarella cheese
- turkey pepperoni
Instructions
- Preheat oven to 450°F
- Cook cauliflower following package instructions
- Let cool, then pour cauliflower rice into a linen towel over bowl and squeeze all liquid out of rice
- Combine cauliflower rice with spices, egg white and parmesan and mix well
- Make crusts by placing cookie cutter on silicone lined baking mat and pressing ¼ cup of cauliflower rice mixture cookie cutter, pressing down to make a mini crust – repeat with rest of mixture (you should get 4 crusts with this)
- Bake crusts for 20 minutes then flip and bake for 10 more minutes
- Assemble pizzas then bake for 10 more minutes, or until cheese melts
- Let cool slightly then serve
