Skinny Red Velvet Cheesecake Bars

Happy Valentine’s Day, y’all! These red velvet cheesecake bars might just be my new favorite Valentine’s day treat. Not only are they festive, but they are also SUPER easy to make. If you are feeling extra fancy, you can make them in a sheet pan then use a cookie cutter to cut out little heart shaped bars.

Skinny Red Velvet Cheesecake Bars

Ingredients
  

Crust

  • 5 sheets graham crackers
  • 20 Nilla wafer cookies
  • 4 tbsp butter melted

Filling

  • 8 oz reduced fat cream cheese room temperature
  • ¾ cup fat free vanilla greek yogurt
  • ¾ cup red velvet cake mix
  • 1 egg white
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F
  • Crush graham crackers and nilla wafers in food processor
  • Combine with melted butter until sand like consistency is reached
  • Press crumb mixture into 8×8 baking dish – you can either grease edges or line with parchment to prevent sticking
  • Bake crust for 8-10 minutes then set aside to cool
  • In stand mixer or with hand mixer, combine cream cheese, yogurt, cake mix and egg white then beat on medium speed until combined
  • Fold in chocolate chips
  • Pour into completely cooled crust then top with additional chocolate chips
  • Bake at 350°F for 25-30 minutes
