Low Fat Dark Chocolate Cherry Muffins

These low fat dark chocolate berry muffins are the best Valentine’s day treat!! I like to top these cuties off with coarse sugar for a nice crunchy top, but feel free to omit if you are trying to be good!

Low Fat Dark Chocolate Cherry Muffins

Ingredients
  

  • cup AP flour
  • 2 tsp baking powder
  • ¾ cup sugar
  • cup skim milk
  • cup applesauce
  • 1 egg white
  • 1 tsp vanilla
  • 1 can tart cherries drained
  • ½ cup dried tart cherries
  • ½ cup dark chocolate chips
  • coarse sugar for topping

Instructions
 

  • Preheat oven to 400°F
  • Combine flour, baking powder and sugar into bowl of stand mixer
  • Add applesauce, egg white and vanilla
  • Slowly add milk, beating on medium speed until incorporated
  • Add canned cherries and beat for another minute
  • Fold in chocolate chips and dried cherries
  • Scoop into greased muffin tins or muffin liners then top with coarse sugar
  • Bake for 15-20 minutes until toothpick comes out clean
