Easy Strawberry Rhubarb Jam

I am obsessed with this strawberry rhubarb jam! It is easily one of my FAVORITE jams. I seriously can not keep a jar of this stuff in my fridge. I ended up eating my first batch of jam in about 2 days. Then, when I made a second batch, my sister ended up stealing it to give to her husband for their anniversary (along with a jar of my marinara sauce, lol). Needless to say, this strawberry rhubarb jam is dangerously addicting. It also makes FANTASTIC fillings for homemade Pop-tarts and homemade Toaster Strudels. For those of you who live in the south, rhubarb can be pretty hard to find. However, our Harris Teeter and Lowes Foods both have it in the summer months!
Strawberry Rhubarb Jam
the easiest and best jam ever
Ingredients
- 2 qts strawberries diced
- 4 cups rhubarb
- 1 cup sugar
- 1/4 tsp vanilla
- juice from 1 lemon
Instructions
- Combine all ingredients in saucepan
- Simmer on medium heat until rhubarb breaks down but strawberries still have texture, about 20-30 minutes
- Remove from heat and let cool completely

For thicker jam, let cook longer until sauce reduces significantly
