Bert’s Potato Salad

Happy Family Friday, y’all! This potato salad is an old family recipe passed down from my grandma’s grandma, Bert. While I still prefer my Aunt Laura’s potato salad since it reminds me of summers in Waupaca, this recipe is also VERY good. Be sure to keep stirring when cooking the egg, vinegar and sugar – you don’t want your egg to scramble!

Bert’s Potato Salad

easy old fashioned potato salad made with Miracle Whip

Ingredients
  

  • 1 egg beaten
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • ½ cup Miracle Whip
  • ½ cup celery diced
  • 1 ½ lb potatoes warm and diced
  • 2 hard boiled eggs
  • ½ onion diced

Instructions
 

  • Mix beaten egg, sugar and vinegar then put on stove to thicken (1-2 min)
  • Let cool then mix with Miracle Whip
  • Mix with potatoes, onions, eggs, celery and season with salt and pepper
