Aunt Laura’s Potato Salad
My Aunt Laura’s potato salad is the BEST. It is a super simple recipe, but it tastes fantastic. The best part is that you can make it ahead of time because it only gets better with age. This potato salad is a staple at pretty much every summer time event. This is actually the only recipe I will use Hellmann’s mayo for (#TeamDuke’s) because it has to be made EXACTLY like my Aunt Laura makes it. This is the perfect side with hotdogs, brats and/or hamburgers. I usually make it alongside my turkey burger recipe.
Aunt Laura’s Potato Salad
a summertime classic – the perfect side dish for a cookout
Ingredients
- 8-10 red potatoes cooked and diced (peeled, optional)
- 3 hardboiled eggs
- 1 small onion finely diced
- 1/2 cup light mayo
- 1 tsp vinegar
- 1/2 tsp mustard
- 1 tsp milk
- salt and pepper, to taste
Instructions
- saute onions in olive oil and season with salt and pepper
- when onions are translucent, set aside
- in small bowl, mix all wet ingredients together
- fold onions and potatoes into wet mixture
- finally tear eggs into bite sized chunks and gently mix into the potato salad
- refrigerate for at least an hour before serving
