Nanny Craddock’s Cinnamon Pound Cake

Today is a very exciting day for the Myers fam – my sister in law, Caitlin, is getting married! In honor of this occasion I am posting a very special recipe from her husband-to-be’s family: Nanny Craddock’s cinnamon pound cake. Y’all, not only is this pound cake is out of this world good, it is also SUPER easy. I did go a little rogue and add a fun little layer of cream cheese frosting with each cinnamon layer, but feel free to omit if you want the OG recipe.

Nanny Craddock’s Cinnamon Pound Cake

Ingredients
  

Cake

  • 1 box Duncan Hines yellow cake mix
  • 8 oz sour cream
  • 1 pkg lemon instant pudding
  • ½ cup canola oil
  • 4 eggs
  • 1 tsp vanilla
  • cup milk

Cinnamon Swirl

  • ¾ cup brown sugar
  • 3 tsp cinnamon

Cream Cheese Filling

  • 8 oz cream cheese
  • 1 egg white
  • 2 tbsp sugar
  • ¼ tsp vanilla extract
  • tsp salt

Instructions
 

  • Preheat oven to 350°F
  • Mix all cake ingredients together, set aside
  • In separate small bowl, mix together cinnamon swirl brown sugar and cinnamon then set aside
  • In medium sized bowl, beat together cream cheese filling ingredients and then set aside
  • Spray a large loaf pan with nonstick spray then pour ⅓ of the batter into the pan
  • Add half of the cream cheese mixture and then sprinkle ⅓ of the brown sugar mixture on top of the cream cheese
  • Add half of the remaining cake batter over the cinnamon mixture then top with remaining cream cheese and half of the brown sugar mixture
  • Add the final layer of the cake batter – loaf pan should be 3/4 of the way full otherwise the cake will spill out
  • Take a knife and swirl around lightly in batter to help spread cream cheese
  • Sprinkle top of loaf with remaining cinnamon sugar mixture and then bake for 1 hour
