Crockpot Salsa Chicken
This crockpot salsa chicken is seriously the EASIEST recipe ever. Just throw all the ingredients into a crockpot and the chicken is ready to shred in just three hours. To make things even easier, I shred the chicken using my stand mixer on low with the beater attachment (#lazy). I use this for the adobo seasoning and this for the sazon seasoning. Crockpot salsa chicken is great in burritos, tacos and enchiladas. I also really love it as a topper for nachos and on a taco salad! I do love a good taco salad (check out my beef taco salad recipe) and this goes great with Spanish rice, black olives and crunched up Doritos.
Crockpot Salsa Chicken

Equipment
- slow cooker
Ingredients
- 1 lb chicken breasts boneless, skinless
- 4 cups fresh salsa
- 1 can diced tomatoes with green chiles
- 1 cup chicken broth
- 2-3 tbsp sazon seasoning with saffron
- 1 tbsp adobo seasoning
- 1/2 tbsp chicken bouillon powder
- 1 onion diced
- 1 jalapeno diced, optional
Instructions
- combine all ingredients in a crock pot and cook on high for 3 hours – I usually start with 2 tbsp of the sazon and then end up adding more later
- shred chicken and then return to crockpot
- let cook on low for 10-15 more minutes, then test for seasoning – at this stage I generally add a little more of the sazon because I love the flavor of it
- use slotted spoon to scoop out salsa chicken into bowl or pour crockpot into colander to drain
Notes
I use mild salsa for this recipe because I am not super into spices but feel free to add extra heat!
