Easy Chocolate Chip Cookie Icebox Cake
Happy Friday, y’all!! BOY do I have a treat for you – an easy peasy chocolate chip cookie icebox cake! It is HOT down here in North Carolina these days so this icebox cake is the PERFECT no bake dessert to help us beat the summer heat. This recipe literally could not be any easier to make. You can totally use homemade chocolate chip cookies, but I like to use the Tate’s Bake Shop chocolate chip cookies.
Chocolate Chip Cookie Icebox Cake
Ingredients
- 16 oz Cool Whip
- 1 pkg instant vanilla pudding
- 1 cup milk
- 1 tsp vanilla extract
- 1 pkg chocolate chip cookies I like Tate's
- chocolate chips to topping
Instructions
- Combine cool whip, pudding, milk and vanilla
- In an 8×8 dish, layer half chocolate chip cookies along bottom then top with half the pudding mix
- Repeat this with another layer of cookies and then the pudding mixture
- Top with chocolate chips and refrigerate until ready to serve
