Corned Beef Sandwiches
This, ladies and gentlemen, is my FAVORITE sandwich. Much like the leftover sandwich from Thanksgiving, the leftover corned beef sandwich is hands down the best part of St. Pattys Day. The yummy, salty corned beef, the Swiss cheese, the pickle, the tangy sauerkraut and the Russian dressing all come together to create the BEST sandwich known to man. I tried to lighten it up a little bit by using light mayo and the thin Swiss cheese, but this is certainly not a skinny sandwich.
Corned Beef Sandwiches

Ingredients
- 4 slices corned beef thickly sliced
- 2 slices Swiss cheese sliced
- 2 sandwich dill pickles
- 4 slices rye bread
- 1/4 – 1/2 cup sauerkraut
- 2 tbsp Russian dressing
Russian Dressing
- 1/2 cup light mayo
- 2 tbsp ketchup
- 2 tbsp fresh lemon juice
- 1 tsp Worcestershire
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 tsp sriracha
Instructions
- make dressing by combining ingredients and mixing until a homogenous mixture
- assemble sandwiches
