Turkey and Kale Quinoa Bowl
OMG y’all. I am OBSESSED with all the What’s Gaby Cooking seasonings from Williams Sonoma. This dish uses Gaby’s Go To Blend, but I highly recommend the mini set because it gives you a taste of a lot of the fun seasonings. This bowl has all sorts of good things like kale, tomatoes, quinoa, turkey and then I added some artichoke hearts, because they were there and why not?
Turkey and Kale Quinoa Bowl
Ingredients
- 1 cup quinoa
- 1 lb ground turkey
- ¼ cup onion minced
- 1 tsp garlic minced
- ¼ cup artichoke hearts chopped
- 2 tomatoes seeded and chopped
- 3 cups kale chopped
- 1 tsp chicken bouillon
- 1 tsp What's Gaby Cooking, Gaby's Go to Blend
- ⅛ cup fresh parsley minced
- ½ tsp lemon juice
Instructions
- make quinoa following package instructions – I like to use a rice cooker and substitute water for low sodium chicken broth
- in a large skillet, cook ground turkey and then set aside
- in same skillet, saute onion in olive oil until translucent and season with salt and pepper
- add garlic and after about 1 minute, add kale – you might need to add more olive oil to help cook down kale
- when kale is cooked down a bit, add seasonings and lemon juice
- add turkey and quinoa to pan and let cook – at this stage, you might want to add a splash of chicken broth to keep things moist
- after chicken and quinoa have been well mixed with the kale and onion mixture, add artichoke hearts, tomatoes, parsley and lemon juice
- let cook for about 5 minutes, then add more of Gaby's Go To Blend, to taste (I like a lot but David likes it a little less aggressive, so I strive for a happy medium)
- serve in a bowl and top with cheese if so desired
