Irish Soda Bread

I love Irish soda bread. The first time I had it was in Wisconsin, when I was visiting for my cousin Amy’s bachelorette weekend. I arrived a few days before the event so I could hang out with my Aunt Trish and Uncle Blake – two of my favorite people EVER. It was on this trip that Aunt Trish introduced me to the best Irish soda bread ever. I seriously think I ate the majority of the loaf. This is an American version of this bread, so it is much sweeter than the traditional Irish version. It is just the perfect breakfast to get you in the St. Patty’s Day spirit!

Irish Soda Bread

Ingredients
  

  • 2 cups AP flour
  • 1 cups wheat flour
  • 2/3 cup sugar
  • 1 tsp salt
  • tsp baking soda
  • 4 tbsp butter melted
  • 2 tbsp applesauce
  • 1 ¾ cups buttermilk
  • 3/4 cup raisins optional
  • 1/4 cup coarse sugar for topping

Instructions
 

  • preheat oven to 400 F
  • whisk together salt, flour, sugar, baking soda
  • work butter into flour
  • add egg, buttermilk and applesauce
  • when combined, spread into greased loaf pan and sprinkle top with coarse sugar
  • bake for 45-55 minutes
