Air Fried Shrimp Po Boy

I LOVE a good shrimp po boy. To make this cajun classic a little bit lighter, I use this air fried shrimp recipe and a lightened up cajun remoulade. The key to this recipe is finding a good bun. Usually we get the St. Pierre brioche buns because they are amazing, but occasionally our local grocery store will have some really good buns, too.

Shrimp Po Boy

Ingredients
  

  • 1 lb air fried shrimp
  • 4 good buns
  • shredded lettuce
  • sliced tomato

Cajun Remoulade

  • 1 cup light mayo
  • 3 tbsp ketchup
  • ½ tbsp dried parsley
  • 1 tsp mustard
  • 2 tsp cajun seasoning
  • ½ tbsp lemon juice
  • ½ tsp Worcestershire sauce
  • 1 tsp onion powder
  • ½ tsp garlic powder

Instructions
 

  • Combine all ingredients for remoulade
  • Assemble sandwiches with remoulade, shrimp, lettuce and tomato
