Skinny Gingerbread Oatmeal Cookies
These skinny gingerbread oatmeal cookies are the star on this 9th day of the #25DaysofCookies! OMG Y’all. These guys are FANTASTIC. The texture is just perfect and the gingerbread-y spices give these cookies a ~festive~ feel. While these cookies are absolutely delicious on their own, adding sprinkles and/or a royal icing glaze makes these NEXT LEVEL good. I am not going to say you won’t be able to tell that they are skinny because, come on, you can always tell a skinny cookie. BUT – just give these guys a try. I promise they are absolutely delicious.
Skinny Gingerbread Oatmeal Cookies

Ingredients
- ½ cup AP flour
- ½ cup quick oats
- ¼ cup sugar
- ¼ tsp baking powder
- ¼ tsp baking soda
- 1 egg white
- 3 tbsp honey
- ½ tsp vanilla
- ¼ tsp ginger
- ¼ tsp allspice
- ¼ tsp cinnamon
- ⅛ tsp cloves
- ⅛ tsp nutmeg
- sprinkles optional, for topping
- royal icing optional, for topping
Instructions
- Combine all then refrigerate dough for at least 30 minutes
- Preheat oven to 375°F
- Scoop into balls then flatten slightly
- Top with sprinkles, optional
- Bake for 8-10 minutes
- If drizzling with royal icing, drizzle over completely cooled cookie
