25 Days of Cookies: Day 16

Usually I am not one to go for gluten free, dairy free recipes, but I have a friend at work who can’t have dairy, gluten OR corn (I honestly do not know how he survives) and every single time we have a party, I always feel so bad for him because he can’t eat like anything. So – this year I made him these oatmeal chocolate chip cookies for our holiday party, except I substituted applesauce for the vegan butter (because the vegan butter was gross).
