Healthy Berry Jam Oatmeal Bars

Happy May, y’all!! These healthy berry jam oatmeal bars are the perfect vegan, refined sugar free sweet treat that will give you all the spring vibes!

Berry Jam Oatmeal Bars

Ingredients
  

Berry Jam

  • 16 oz blueberries
  • 12 oz strawberries chopped
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • juice from lemon
  • pinch of salt

Oatmeal Bars

  • cups oatmeal
  • ½ cup oat flour
  • ¼ cup flax seed meal
  • ¼ cup vegan butter melted
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • pinch salt
  • flaked salt for topping

Instructions
 

  • Preheat oven to 375°F
  • Combine all jam ingredients in saucepan and let cook down until thickened into a jam consistency, stirring frequently to prevent from burning
  • While jam is cooling, combine ingredients for the crust and combine until moistened
  • Pour half of the crust into a prepared 8×8 pan and press down
  • Bake bottom layer of crust for about 10 minutes
  • Add jam on top of baked crust layer, spreading evenly over the top, and then top with the remaining oat mixture and then sprinkle lightly with flaked salt
  • Bake for 25 more minutes then let cool for 20 minutes before cutting
