Taco Casserole
This taco casserole is based on my Grandma Bray’s taco pie recipe and it is LEGIT. Grandma’s taco pie is baked in a pie shell. I was not feeling that, so I just omitted the shell and voila – the best taco casserole ever!!! David liked to add to the fun by scooping it up with Tostitos and eating it like a dip.
Taco Casserole
Ingredients
- 1 lb lean ground beef
- 1 pkg taco seasoning
- 3/4 cup water
- 1 jalapeno diced
- 1 onion chopped
- 1 cup shredded reduced fat sharp cheddar cheese
- 1 cup fat free plain greek yogurt
- 1-2 cups crumbled Tostitos
- lettuce for topping
- tomato for topping
- sliced black olives for topping
Instructions
- Preheat oven to 325°F
- Saute onion in olive oil then add jalapeno
- Add hamburger and when browned, add taco seasoning and water
- Let cook until water is almost evaporated
- Spray pie pan or small casserole dish with nonstick spray
- Add crumbled chips to bottom of dish so that bottom of dish is covered
- Add cooked hamburger over top of chips and then top with greek yogurt and cheese
- Cover then bake for about 30 minutes
- Serve with chopped lettuce and tomato
