25 Days of Cookies: Day 1
HAPPY DECEMBER, Y’ALL!! The countdown to Christmas has OFFICIALLY begun (as if I haven’t been celebrating since Nov 1st LOL). To kick off this wonderful season, I bring you a *healthy* treat that literally could not be easier to make: chocolate peppermint protein date balls cookies!! My favorite protein powder these days is this one made by Blogilates from Target but you can use whichever is your favorite!
Chocolate Peppermint Protein Date Balls
Ingredients
- ½ cup vanilla protein powder
- 12 dates
- ¼ cup cocoa powder
- 3 tbsp almond butter
- ½ tsp peppermint extract
- almond milk
- ¼ cup vegan mini chocolate chips optional
- ¼ cup crushed candy canes optional
Instructions
- Combine all ingredients except milk in bowl of a mixer and mix until combined
- Add enough milk to form a scoopable dough
- Use cookie scoop to form balls
- Top with additional crushed candy canes, if desired
- Keep in fridge or freezer
