25 Days of Cookies – Day 8
Happy 8th Day of the 25 Days of Cookies! I got these cool thumbprint cookie cutters from Williams Sonoma so today’s cookie of the day is a shortbread thumbprint cookie with cranberry jam! This recipe utilizes two of my fav Christmas recipes: rolled out shortbread and cranberry jam! If you are more into the pillowy soft thumbprint cookies, I suggest making these cranberry jam thumbprint cookies instead! If cranberry jam is not your thing, feel free to sub with your favorite filling!
Cranberry Jam Shortbread Thumbprint Cookies
Ingredients
- 1 cup flour
- ½ cup butter room temperature
- 3 tbsp powdered sugar
- ¼ tsp almond extract
- cranberry jam or any other jam
Instructions
- Mix together flour, butter, sugar and almond extract until dough forms
- Freeze dough 15 minutes
- Preheat oven to 350°F
- Roll out cookies and cut out using thumbprint cookie cutters or roll into balls and place thumprint in middle
- Bake cookies for 15- 18 minutes until starting to brown
- Fill with cranberry jam (or any jam of preference)
