Low Fat Cranberry Muffins
I LOVE muffins. I have made these three times already this season, they are that good. These little babies (big babies if you use the jumbo muffin pan like I did) are sweet with a little blast of tart cranberry and the cinnamon is kind of like a warm hug. I added coarse sugar on top so each bite had a nice crunch.
Low Fat Cranberry Muffins

Ingredients
- 1 1/2 cup all purpose flour
- 3/4 cup white sugar
- 1/3 cup applesauce
- 1/3 cup skim milk
- 1 egg white
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 1/2 cup cranberries
- 1/2 cup coarse sugar
Instructions
- Preheat oven to 400°F
- Mix all ingredients together except coarse sugar
- Scoop into greased muffin pan and sprinkle the tops of each muffin with coarse sugar
- Bake at 400°F for ~20 minutes, until a toothpick comes out clean
