13 Nights of Halloween: Night 3
Night 3 of the 13 Nights of Halloween brings: Jack o’ Lantern Stuffed Peppers!!! I know, super festive. I love these because I get the experience of pumpkin carving without a whole lot of fuss. Plus, they are SUPER cute. Such an easy and festive dinner to get you in the holiday spirit.
Jack o’ Lantern Stuffed Peppers
Stuffed peppers carved to look like a jack o' lantern!!!
Ingredients
- 3 orange peppers
- 1 lb lean ground chicken
- 1/4 cup minced onions
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp Italian seasoning
- 1 14 oz can tomato sauce
- 1 cup chicken broth
- 1/2 cup mozzarella cheese
- 1 1/2 cup quinoa cooked
Instructions
- prep peppers by cutting off the stems, cleaning out the seeds and then carving eyes and a mouth in each peppers like a jack o' lantern
- set oven to 400°F
- in skillet, saute onion until translucent then add ground chicken
- season chicken with garlic powder, Italian seasoning, salt and pepper
- when chicken cooked, add 1/4 cup of chicken broth and can of tomato sauce and quinoa
- when sauce reduced, stuff each pepper with mixture and top with cheese
- place each stuffed pepper in dutch oven and fill the bottom with rest of chicken broth
- cover dutch oven and bake for ~ 45 minutes, then uncover and bake for ~5 more minutes so cheese browns slightly
