Cajun Turkey Sausage and Rice

According to my one of my many Louisianan coworkers, the Carnival officially starts after the Epiphany on January 6th, which is WILD to me. I mean Ash Wednesday is so far away! But let’s be honest we all need a little fun, so I am on board this year. We are going to kick off the Carnival season with this cajun turkey sausage and rice bowl. This dish has quickly become one of my favorite weeknight meals because it is super easy but it also tastes delicious. It is also great for meal prep lunches! You can use whatever method you like to make rice, but I always go with with this little rice cooker I got on Amazon. It is so simple, but works every single time. I also like to add chopped chicken breast to this dish when I have it on hand!

Cajun Turkey Sausage and Rice

An easy weeknight meal

Ingredients
  

  • 1 lb smoked turkey sausage links chopped into bite sized pieces
  • cups rice uncooked
  • 2 green peppers chopped
  • 1 sweet onion diced
  • 1 jalapeno diced fine
  • 1 large garlic clove diced
  • 2-4 tsp cajun seasoning to taste
  • 1-1½ tbsp chicken bouillon seasoning to taste

Instructions
 

  • Cook rice following package directions – I use a little rice cooker. While rice is cooking, prep veggies.
  • In large saute pan, saute onions in olive oil
  • When onions are translucent, add garlic and peppers – if too dry add a bit more olive oil to the mix
  • Add chopped sausage, stirring mixture well – at this point I like to let the mixture sit a bit before stirring again so that the sausage get a little bit of a burnt crust but feel free to keep stirring so that doesn't happen
  • When rice is done, add to pan with seasoning and mix well – if you feel the mixture is too dry, add a little bit of low sodium chicken broth
  • Cook for a couple more minutes then test for seasonings – you may want to add a little more cajun seasoning, salt or more chicken bouillon powder
