Birthday Cake Meringues

Happy Friday, y’all!!! This is a particularly exciting Friday because it is kicking off my birthday weekend!!! My birthday is on Monday this year, so this weekend will be filled with all things cake batter and sprinkles!! We are kicking off the weekend with these cute little birthday cake meringues. Y’all know I am all about the meringue life and these birthday cake flavored cuties may just be my favorite ones yet!

Birthday Cake Meringues

Ingredients
  

  • 4 egg whites
  • ½ tsp cream of tartar
  • 1 cup sugar
  • ½ tsp cake batter extract
  • ½ tsp clear vanilla extract
  • ½ cup sprinkles
  • pinch salt
  • sprinkles for topping, optional
  • food coloring optional

Instructions
 

  • Preheat oven to 200°F
  • Whisk egg whites until foamy
  • Add cream of tartar and mix on high speed until soft peaks form
  • Slowly add sugar and mix until firm peaks form
  • Add vanilla extract and cocoa powder and mix until cocoa powder is incorporated
  • Add food coloring (optional) and continue beating until stiff peaks form
  • Add to a piping bag fitted with any tip and pipe out onto lined baking sheet
  • Bake ~ 1 hour
  • Let meringues cool 1-2 hours before storing in air tight container
