Collard Greens

Happy NYE!! I don’t know about y’all, but I am READY for 2021. This year has been ~rough~ so I am ready for the fresh start a new year brings. According to southern tradition, there are 4 foods that bring good luck to a new year: pork (for prosperity), collards (good fortune), black eyed peas (wealth) and cornbread (gold). This collard greens recipe combines pork (bacon, or pancetta if you’re really ~fancy~) with collards to create a delicious greens recipe the whole family is sure to love.

Collard Greens

Collard greens with bacon or pancetta

Ingredients
  

  • 1 lb collard greens chopped
  • 4 strips thick cut bacon can use pancetta
  • 1-2 tsp sriracha
  • 3 cups low sodium chicken broth
  • ½ tsp pepper
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • ¼ cup white wine
  • 1 tsp seasoned salt

Instructions
 

  • Cook bacon in large pot or dutch oven, then set aside to cool
  • In bacon drippings, add onion – you may need to add a little olive oil
  • When onions are translucent, add garlic and cook until garlic is aromatic (~1 minute) – careful not to let the garlic or onions burn
  • Chop bacon into pieces then add collards and bacon to pot, mixing well and cooking for just a few minutes
  • Add rest of ingredients and bring to a boil
  • Reduce heat and simmer for 2 hours, until the collard greens are tender
  • Once the collards are tender and most of the broth has evaporated – check for salt and spice

Notes

If you like your greens spicier, add some cayenne pepper or more sriracha.
If not salty enough, add more salt (super unlikely)
If too salty – add some water to dilute
