Pimento Cheese
Like any good southern girl, pimento cheese is a summertime staple in our household and is present at all the major holidays. This recipe is great on crackers, as a sandwich and even on hamburgers! I have two versions: one for the more adventurous with blue cheese and parmesan and the classic hit. Both are quite delicious, if you try both – let me know your favorite!!
Pimento Cheese
Ingredients
- 1 cup mayonnaise I prefer Duke’s
- 3 tbsp cream cheese softened
- 2 tsp worcestershire sauce
- 2 tsp fresh lemon juice
- 2 tsp dried mustard
- 2 tsp sriracha
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp sweet onion grated
- 12 oz diced pimentos drained
- 8 oz extra sharp white cheddar cheese finely shredded
- 8 oz sharp yellow cheddar cheese finely shredded
- 2 tbsp blue cheese optional
- 2 tbsp parmesan finely grated, optional
- 1 tbsp cream cheese softened, only add if also adding blue cheese and parmesan
Instructions
- Mix together all but the cheddar cheeses (and the blue cheese if going that route) and the pimentos until smooth
- Fold in the cheeses
- Fold in the pimentos – if the mixture looks too dry, add a little more mayonnaise or juice from the pimentos
- Add to container and refrigerate, covered, for at least 8 hours
