Pimento Cheese

Like any good southern girl, pimento cheese is a summertime staple in our household and is present at all the major holidays. This recipe is great on crackers, as a sandwich and even on hamburgers! I have two versions: one for the more adventurous with blue cheese and parmesan and the classic hit. Both are quite delicious, if you try both – let me know your favorite!!

Ingredients
  

  • 1 cup mayonnaise I prefer Duke’s
  • 3 tbsp cream cheese softened
  • 2 tsp worcestershire sauce
  • 2 tsp fresh lemon juice
  • 2 tsp dried mustard
  • 2 tsp sriracha
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp sweet onion grated
  • 12 oz diced pimentos drained
  • 8 oz extra sharp white cheddar cheese finely shredded
  • 8 oz sharp yellow cheddar cheese finely shredded
  • 2 tbsp blue cheese optional
  • 2 tbsp parmesan finely grated, optional
  • 1 tbsp cream cheese softened, only add if also adding blue cheese and parmesan

Instructions
 

  • Mix together all but the cheddar cheeses (and the blue cheese if going that route) and the pimentos until smooth
  • Fold in the cheeses
  • Fold in the pimentos – if the mixture looks too dry, add a little more mayonnaise or juice from the pimentos
  • Add to container and refrigerate, covered, for at least 8 hours
