Healthy Strawberry Rhubarb Crisp
This healthy strawberry rhubarb crisp is giving me alllll the summer vibes. The best part of this crisp is that it is both vegan and refined sugar free!!
Healthy Strawberry Rhubarb Crisp
Ingredients
- 1 lb strawberries chopped
- 2 cups chopped rhubarb
- 1 tsp vanilla
- 2 tbsp maple syrup
- 3 tbsp tapioca flour
Topping
- 2 cups oats
- ⅓ cup flax seed meal
- ½ tsp cinnamon
- 3 tbsp vegan butter
- ⅓ cup maple syrup
- 1 tsp vanilla
- pinch salt
Instructions
- Preheat oven to 350°F
- Combine rhubarb, strawberries, maple syrup and vanilla and then toss with tapioca flour until combined
- Pour mixture into prepared 8×8 dish
- In seperate bowl, combine ingredients for topping and gently stir until well mixed
- Pour topping over top of fruit mixture so that the top is evenly coated
- Bake for 30-40 minutes, until the filling is cooked and the topping is golden brown
