Skinny Hamburger Helper

When we were growing up, my mom would make hamburger helper or tuna helper once a week. It was fast and easy after a long work day. This is such a classic childhood recipe, lightened up. It is not quite as fast as the OG version, but it is worth it! I swapped out the noodles for lentil pasta (so obsessed with Pasta Lensi Yellow Lentil Pasta) but you can use whatever pasta you have on hand!

Ingredients
  

  • 1 lb lean ground beef
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Lawry's salt
  • 1/4 tsp pepper
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 – 2 tsp sriracha to taste
  • 1 box elbow macaroni or whatever pasta you have on hand
  • cups reduced sodium beef broth
  • ½ cup fat free plain greek yogurt
  • 2 cups reduced fat shredded cheddar cheese

Instructions
 

  • In large dutch oven or braiser, cook beef and season with onion powder, garlic powder, lawrys salt, salt and pepper
  • Add broth, ketchup, sriracha and mustard – stir well
  • Add pasta
  • When pasta cooked, add cheese and yogurt
  • Mix well, until yogurt is incorporated and cheese is melted
  • Season with salt, if necessary, then serve and enjoy!
