Skinny Hamburger Helper
When we were growing up, my mom would make hamburger helper or tuna helper once a week. It was fast and easy after a long work day. This is such a classic childhood recipe, lightened up. It is not quite as fast as the OG version, but it is worth it! I swapped out the noodles for lentil pasta (so obsessed with Pasta Lensi Yellow Lentil Pasta) but you can use whatever pasta you have on hand!
Skinny Hamburger Helper
a homemade take on this timeless childhood classic
Ingredients
- 1 lb lean ground beef
- 1 tbsp onion powder
- 1 tsp garlic powder
- 1 tsp Lawry's salt
- 1/4 tsp pepper
- 1 tbsp ketchup
- 1 tsp mustard
- 1 – 2 tsp sriracha to taste
- 1 box elbow macaroni or whatever pasta you have on hand
- 4½ cups reduced sodium beef broth
- ½ cup fat free plain greek yogurt
- 2 cups reduced fat shredded cheddar cheese
Instructions
- In large dutch oven or braiser, cook beef and season with onion powder, garlic powder, lawrys salt, salt and pepper
- Add broth, ketchup, sriracha and mustard – stir well
- Add pasta
- When pasta cooked, add cheese and yogurt
- Mix well, until yogurt is incorporated and cheese is melted
- Season with salt, if necessary, then serve and enjoy!
