Vegan Tofu Burrito Bowl
Happy 2022, y’all! After alllll the indulgence of the holiday season, I kicked off the new year with a vegan & no added sugar challenge! I have found that I really enjoy a plant based lifestyle. While I definitely won’t be vegan full-time, I am definitely going to incorporate it more into our weekly meals. One of my favorite meals recently has been this vegan tofu burrito bowl! It is a perfect weeknight meal and totally customizable to taste! You can serve with rice/cauliflower rice or just eat it plain!
Vegan Tofu Burrito Bowl
Ingredients
- 1 lb firm tofu
- 1 small onion chopped
- 1 tsp garlic
- 1 green pepper diced
- 1 jalapeno diced
- 8 oz mushrooms
- 3 cups spinach roughly chopped
- 15 oz can black beans drained
- 15 oz can corn drained
- 1 cup cooked quinoa
- 1-2 tbsp taco seasoning
- chopped tomatoes for topping
- parsley or cilantro optional; for topping
Instructions
- Drizzle a large saute pan with olive oil then add mushrooms
- When mushrooms start to cook down, add onion, peppers and garlic (you may need to add more oil depending on how much you started with) then season with a pinch of salt and pepper
- When veggies start to cook down, add tofu and crumble in pan
- Add chopped spinach, corn and black beans then season with taco seasoning, to taste
- Let mixture cook for 5-10 minutes, until the tofu and canned veggies are warmed
- Top with chopped tomatoes and parsley (or cilantro), if desired
