25 Days of Cookies – Day 2
Happy second day of the 25 Days of Cookies! Today’s cookie recipe of the day is for my Grandma Bray’s Caramel Nut Ice Box Cookies! These are super easy cookies that are of the slice and bake variety. They are perfect to keep in the freezer for when you have unexpected company over!
Caramel Nut Ice Box Cookies
Ingredients
- 1 cup shortening soft
- 2 cups brown sugar packed
- 2 eggs
- 3½ cups flour
- 1 tsp baking soda
- 1 cup nuts chopped
Instructions
- Cream sugar and shortening
- Add eggs, one at a time
- Whisk together flour and baking soda then add to sugar mixture
- Fold in nuts then shape into 2 rolls and chill for several hours
- Preheat oven to 400°F
- Slice cookies (thicker will be chewy while thinner slices will be crispy) and bake on cookie sheet for 8-12 minutes
