25 Days of Cookies – Day 3
These skinny dark chocolate peppermint cookies are THE BEST. They are basically a brownie in cookie form and let me tell you, you can NOT tell that they are skinny. I got this fun peppermint snow from Williams Sonoma and while I am fully aware that I could easily just crush up a candy cane, the ability to get good crushed peppermint from a jar really does appeal to my lazy side.
Skinny Dark Chocolate Peppermint Cookies
Dark chocolate and peppermint join forces in these yummy brownie-like cookies
Ingredients
- ¼ cup light butter
- ¼ cup applesauce
- ¾ cup sugar
- 1 egg white
- ¼ tsp peppermint extract
- ¼ cup dark cocoa powder
- ¼ tsp salt
- ½ tsp baking powder
- ¼ cup dark chocolate chips
- ¼ cup mini chocolate chips
- 1 cup flour
- 1 tsp vanilla
- ⅛ tsp espresso powder
- 1 candy cane crushed
Instructions
- Combine butter, applesauce and sugar
- Add egg white, peppermint extract and vanilla
- Add cocoa powder, salt, espresso powder, baking powder and flour
- Fold in chocolate chips
- Freeze dough for 30 minutes
- Preheat oven to 350°F
- Scoop into balls and bake 10-12 minutes
- When out of oven, immediately sprinkle peppermint pieces on top of cookies – you must do this while cookies are still hot otherwise they wont stick!
