13 Nights of Halloween – Night 9
On this 9th Night of Halloween, I bring you Rolo stuffed cookies! These are a twist on your basic Toll House chocolate chip cookie but with a fun surprise: a Rolo in the center! To save time and money, I recommend getting these unwrapped Rolos – they are so much easier. To make things even easier, use the store bought dough!
Rolo Stuffed Chocolate Chip Cookie
Ingredients
- 1 cup butter soft
- ¾ cup sugar
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 2¼ cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 cup dark chocolate chips
- 1 cup semisweet chocolate chips
- Rolos enough for 4 dozen cookies
- festive sprinkles for coating
Instructions
- Preheat oven to 375°F
- Combine flour, salt and baking powder then set aside
- Beat butter and sugars until creamy
- Add eggs, one at a time, then add vanilla
- Gradually add flour mixture
- Fold in chocolate chips
- Refrigerate for at least 1 hour
- Scoop by 1½-2 tbsp then place Rolo in center of ball
- Roll in sprinkles and place on baking sheet
- Bake for 10-12 minutes, until golden brown
