Grandma Sharon’s Famous German Potato Salad

Happy Labor Day Weekend, y’all! My Grandma Sharon’s German potato salad is LEGENDARY. I kid you not, my dad talks about this exact recipe ALL the time. Potato salad is such an iconic summer dish. While my Aunt Laura’s potato salad is my all time favorite, this superstar potato salad is a close runner up. This is the perfect side for a cook out/barbecue this weekend!

German Potato Salad

Ingredients
  

  • 11 small red potatoes
  • 1 medium onion minced
  • ½ lb bacon
  • ½ cup sugar
  • 1 tbsp flour
  • 1 egg
  • ¼ cup white vinegar
  • 1 tsp celery seed
  • ½ cup water

Instructions
 

  • Boil potatoes until soft then drain and let cool
  • Slice potatoes and then season with salt and pepper
  • Add onion to sliced potatoes
  • Brown bacon, saving grease in pan
  • Combine sugar, flour and egg then mix until smooth
  • Add vinegar, celery seed and water then mix well
  • Add mixture to bacon grease and cook for about 1 minute, stirring until thick
  • Pour thickened mixture over potatoes
  • Chop bacon and add to dressed potatoes, mixing carefully
