Peppermint Meringues
Happy 14th Day of December, y’all! Today’s cookie is one of my FAVs – peppermint meringues! I love all things meringue. Adding a little hint of peppermint and some candy cane bits makes these little cookies out of this world!!!
Peppermint Meringues
meringue cookies with just a hint of peppermint
Ingredients
- 4 egg whites
- ½ tsp cream of tartar
- 1 cup sugar
- 1 tsp vanilla
- ⅙ tsp peppermint extract
- pinch salt
- candy cane pieces for topping
- red food coloring
Instructions
- Preheat oven to 225°F
- Beat egg whites, salt and cream of tartar on medium-high speed until foamy
- Slowly add sugar and beat on high until stiff peaks form
- Add vanilla and peppermint extract – you can also add food coloring here if you want pink or red colored meringues
- Fit a large disposable piping bag with a large tip – if you want red stripes in the meringues, brush some red food coloring stripes down pastry bag
- Fill pastry bag with meringue and then pipe out onto cookie sheets in little kisses
- Top little kisses with crushed candy cane bits
- Bake for 1 hour then turn oven off and let cool for another hour in the oven
