Grilled Scallops
Happy Seafood Saturday, y’all! Grilled scallops are one of my FAVORITE foods. I love a good scallop any time of the year, but these little babies are a staple at the lake during the summer. These grilled scallops are best served with grilled vegetables (zucchini, mushrooms and Vidalia onions) and rice! Usually I will make 2 batches of the marinade, one for the scallops and then one for the veggies. Both the scallops and veggies are easier to contain and grill in a grill basket. My favorite grill basket is this nifty one from Pampered Chef. I am seriously obsessed with this basket. I am not sure they make them any more (all I can find is links to the basket on eBay) but I also have a Weber grilling basket that works well!
Grilled Scallops
easy grilled scallops with a soy based marinade
Ingredients
- 1 lb scallops
- 1/2 cup soy sauce
- 1/2 cup olive oil
- 1 lemon juice
- 1/4 cup onion minced
- 1/2 tsp garlic minced
- 1/4 tsp white pepper
- 2 tsp Worcestershire sauce
- 1/2 tsp sriracha
Instructions
- pat scallops dry then put in large plastic bag
- combine other ingredients and marinate scallops for 30 minutes
- grill over medium high heat for 2-3 minutes per side, until scallops turn opaque
- serve with rice
Notes
If cooking over indirect heat, cook time will be longer
