Grandma Bray’s Zucchini Bread

My grandma’s zucchini bread is so good. Super moist and sweet, but not too sweet, with a hint of maple. This bread pairs perfectly with some afternoon tea and makes a great breakfast and/or snack. It is such a perfect way to use up some of that summer squash! This recipe makes 2 loaves.

Grandma Bray’s Zucchini Bread

Ingredients
  

  • 1 cup oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 eggs
  • 3 tsp maple flavoring
  • 2 ½ cup flour
  • ½ cup wheat germ
  • 2 tsp baking soda
  • 1 tsp salt
  • ½ tsp baking powder
  • 2 cups zucchini grated
  • 1 cup nuts chopped

Instructions
 

  • Preheat oven to 350°F
  • Combine all but nuts in a bowl and beat together
  • Stir in nuts
  • Pour into loaf pans and bake for 50-60 minutes
