Grandma Bray’s Zucchini Bread

My grandma’s zucchini bread is so good. Super moist and sweet, but not too sweet, with a hint of maple. This bread pairs perfectly with some afternoon tea and makes a great breakfast and/or snack. It is such a perfect way to use up some of that summer squash! This recipe makes 2 loaves.
Grandma Bray’s Zucchini Bread
Ingredients
- 1 cup oil
- 1 cup white sugar
- 1 cup brown sugar
- 3 eggs
- 3 tsp maple flavoring
- 2 ½ cup flour
- ½ cup wheat germ
- 2 tsp baking soda
- 1 tsp salt
- ½ tsp baking powder
- 2 cups zucchini grated
- 1 cup nuts chopped
Instructions
- Preheat oven to 350°F
- Combine all but nuts in a bowl and beat together
- Stir in nuts
- Pour into loaf pans and bake for 50-60 minutes
