Summer Berry Angel Food Cake
This angel food cake is THE cake of summer. When I saw this month’s #SallysBakingChallenge, I knew I had to partake. I used a variation of Molly’s lemon angel food cake, which is my go to. I am not super into plain whipped cream, so I used a variation of what I use in my summer berry tart and my strawberry lemon tart. If you are looking for a light and tasty festive treat, this is it!!
Angel Food Cake with Lemon Cream and Summer Berries
Lemony angel food cake with a lemon cool whip cream and summer berries
Equipment
- half sheet pan
- 6 inch round cake/cookie cutter
Ingredients
Angel Food Cake
- 1 ¾ cup sugar
- 1 cup cake flour
- ¼ tsp salt
- 12 large egg whites
- 1½ tsp cream of tartar
- 1½ tsp vanilla extract
- 1½ tsp lemon juice
- 2 tbsp lemon zest
Lemon Cream Filling
- 32 oz cool whip frozen
- 1 package vanilla pudding mix
- ¼ cup milk
- 2-3 lemons juice and zest, to taste
Fruits
- 1 cup strawberries sliced
- 2 cup blueberries
- 1 cup blackberries
Instructions
- Preheat oven to 325°F
- Beat egg whites and cream of tartar in stand mixer with beater attachment until foamy, then add 3/4 cup of sugar and mix on high until soft peaks form
- Add vanilla, lemon juice and lemon zest to egg whites and beat just until combined
- In separate bowl, combine 1 cup of sugar, cake flour and salt
- Add flour mixture to egg whites slowly, incorporating a little at a time until all combined
- Pour into sheet pan lined with silicone baking mat or parchment paper and evenly spread throughout pan
- Bake 20 minutes, until a toothpick comes out clean
- When cake is cooled, make filling by combining all filling ingredients in mixer
- Then use round cookie cutters to cut out angel food cake rounds
- Assemble cake by spreading a layer of filling and then a handful of various berries over each layer and then topping with a final layer of filling and some decorative berries
- Serve immediately otherwise keep in freezer until about an hour before serving to keep filling from getting too soft
