13 Nights of Halloween – Night 7
On this 7th night of the 13 Nights of Halloween I bring you an olide, but a goodie! I have posted this cute idea every single year because it is SO cute – jack o’ lantern stuffed peppers! Last year I posted ground chicken stuffed jack o’ lantern peppers so this year I am shaking things up with a version featuring ground beef! While I prefer the ground chicken version, my husband is definitely team ground beef!
Beef Jack o’ Lantern Stuffed Peppers
Ingredients
- 5 peppers
- 1 lb ground beef
- ½ sweet onion chopped
- 1 clove garlic minced
- 1 tsp Italian seasoning
- 1½ cups cooked rice
- 15 oz can diced tomatoes
- salt and pepper to taste
- shredded mozzarella cheese for topping
- 1 cup chicken broth
Instructions
- Prep peppers by cutting off the stems, cleaning out the seeds and then carving eyes and a mouth in each peppers like a jack o' lantern
- Preheat oven to 400°F
- In skillet, saute onion until translucent then add garlic and season with salt and pepper
- After about 1 minute, add beef and cook until browned
- Add diced tomatoes, rice and 1/4 cup of chicken broth
- Season with Italian seasoning and any additional salt and pepper, if necessary
- When sauce has reduced, stuff peppers and top with cheese
- Place each stuffed pepper in dutch oven and fill the bottom with rest of chicken broth
- Cover dutch oven and bake for ~ 45 minutes, then uncover and bake for ~5 more minutes so cheese browns slightly
