Pumpkin Hand Pie
Happy Halloween, Y’all!!! We have made it to the end of the countdown! Today’s ~spooky~ recipe is a super simple jack o’ lantern hand pie! These little Poptart-like cuties use leftover pumpkin butter to fill them and they are carved like a little jack o’ lantern! While I used pumpkin butter, you can, of course, fill these hand pies with whatever you desire.

Equipment
- Pumpkin shaped cookie cutter
Ingredients
- 1 11 inch pie crust dough
- 3 tbsp pumpkin butter
- 1 egg white beaten
Instructions
- Set oven to 400 degrees F
- Cut the pie crusts into pumpkins using large pumpkin cookie cutter
- On 3 of the pumpkins, carve jack o' lantern face
- Spoon 1 tbsp of pumpkin jam into center of pumpkin doughs that are not carved
- Brush the eqq white around the edges of the pumpkins with the pumpkin butter and place carved pumpkin dough on top, pressing very gently – you don't want the butter to ooze out!
- Brush tops with egg then crimp edges with fork, sealing the pumpkin putter inside each pie
- Bake 15-18 minutes
