Beef Tomato Soup
This is my absolute favorite soup. It is hearty, delicious and it is SO easy to make. I usually prep the veggies the night before so that all I have to do is get the soup going.
Beef Tomato Soup
Ingredients
- 1 lb lean ground beef
- 1 small sweet onion finely diced
- 2 tsp minced garlic
- 1 cup carrots diced
- 1 cup celery diced
- 28 oz crushed tomatoes
- 1/2 box pasta
- 48 oz beef broth
- 1 tsp fresh lemon juice
- 1 tsp Italian seasoning
- 2 bay leaves
- salt and pepper to taste
Instructions
- cook hamburger in frying pan, drain and set aside
- in large pot or dutch oven, saute onions in olive oil and season with salt and pepper
- when onions are translucent, add garlic
- when garlic is aromatic, add veggies and cook down until tender
- add beef broth, crushed tomatoes, lemon, seasoning and bay leaves
- let cook over medium heat for about 45 minutes
- add pasta and cook until al dente (if freezing, cook pasta separately so the pasta doesn't get too mushy)
- take out bay leaves and serve
