Beef Tomato Soup

This is my absolute favorite soup. It is hearty, delicious and it is SO easy to make. I usually prep the veggies the night before so that all I have to do is get the soup going.

Ingredients
  

  • 1 lb lean ground beef
  • 1 small sweet onion finely diced
  • 2 tsp minced garlic
  • 1 cup carrots diced
  • 1 cup celery diced
  • 28 oz crushed tomatoes
  • 1/2 box pasta
  • 48 oz beef broth
  • 1 tsp fresh lemon juice
  • 1 tsp Italian seasoning
  • 2 bay leaves
  • salt and pepper to taste

Instructions
 

  • cook hamburger in frying pan, drain and set aside
  • in large pot or dutch oven, saute onions in olive oil and season with salt and pepper
  • when onions are translucent, add garlic
  • when garlic is aromatic, add veggies and cook down until tender
  • add beef broth, crushed tomatoes, lemon, seasoning and bay leaves
  • let cook over medium heat for about 45 minutes
  • add pasta and cook until al dente (if freezing, cook pasta separately so the pasta doesn't get too mushy)
  • take out bay leaves and serve
