Easy Homemade Blueberry Breakfast Cookies
Hello friends! So sorry I have been gone so long, our apartment ended up flooding (for the FIFTH time) so David and I bought a house and MAN, who knew I had so much stuff?! We are now all moved in (thank goodness) and settling into the new home owner life. However, we have discovered something TRAGIC with the house: THE STOVE DOES NOT WORK. Isn’t that just horrible. So this week has been some major creative cooking since it turns out I use the stove for pretty much every meal. Fortunately, my baking has not been impacted in such a severe way and for my first bake, I decided to make a homemade version of David’s weekday breakfast: the delicious Belvita breakfast biscuit. These are so good, you will feel like you’re eating dessert for breakfast!
Blueberry Breakfast Cookies
Ingredients
- 1 1/3 cup AP flour can also use whole wheat
- 1 1/4 cup rolled oats
- 1/4 cup sugar
- 1/2 cup brown sugar
- 2 tbsp honey
- 1/8 tsp cinnamon plus
- 1/2 tsp salt
- 3/4 cup melted butter
- 1-3 tbsp milk
- 1/2 cup dried blueberries
- 1 tsp lemon juice
Instructions
- Preheat oven to 325°F
- Combine dry ingredients and then stir in butter, milk, lemon juice and honey
- If dough is dry, add a little more milk until the dough comes together
- If making shapes: roll dough out on floured surface and cut into shapes, otherwise, roll into 2 inch balls
- Bake cookies ~15 minutes if looking for softer cookies and ~ 20 minutes if you like crispier cookies
