Skinny(ish) Pretzels and Beer Cheese

We have an appetizer night (yay for appies) at least once a month because who doesn’t love nibbling on lots of small, delicious foods?! When the genius Gina (@skinnytaste) released her AMAZING bagel recipe, I knew I had to try and make pretzels using the same dough. Lo and behold, this boyfriend pleasing recipe was born!

 

Skinny(ish) Pretzels and Beer Cheese

Ingredients
  

Pretzels

  • 1 cup all purpose flour
  • 1 cup nonfat plain greek yogurt
  • 2 tsp baking powder
  • 2 tsp salt

Beer Cheese

  • 3 tbsp butter
  • 3 tbsp all purpose flour
  • 3/4 cup skim milk
  • 1/2 cup light beer
  • 1 tsp dijon mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp sriracha
  • 3 cups reduced fat shredded cheddar cheese

Instructions
 

Pretzels

  • preheat oven to 350°F
  • fill a medium saucepan 3/4 of the way with water and add about 1/4 cup of baking soda - bring to boil
  • mix flour, salt, baking powder and yogurt together until a ball forms
  • roll into log and cut in 2 inch pieces
  • when baking soda water is boiling, put pretzel pieces in water, a few at a time, and cook ~1-2 minutes (pretzel pieces should rise to the top of the water when ready) then place on baking sheet
  • sprinkle tops of pretzel pieces with coarse kosher salt
  • bake ~22 minutes, until pretzels are golden brown

Beer Cheese

  • in a medium saucepan over medium heat, melt butter
  • whisk in flour
  • whisk in milk, a little at a time, mixing well each time
  • stir in beer, dijon mustard, garlic powder, sriracha and salt
  • remove from heat and fold in cheese, stirring until all cheese is melted
