Paleo Strawberry Muffins

Happy January, y’all! We are kicking off the new year with these easy peasy paleo strawberry muffins! My fav birthday cake is my Grandma Sharon’s strawberry refrigerator cake. In the spirit of my birth month, I wanted to create a healthier alternative treat that still had the strawberry flavor I love. I used homemade strawberry jam from this recipe, but feel free to use whatever you like!

Paleo Strawberry Muffins

Ingredients
  

  • 1 lb strawberries
  • ½ cup coconut oil melted
  • ½ cup maple syrp
  • 1 tsp vanilla
  • 2 tbsp strawberry jam
  • ¾ cup coconut flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 4 eggs

Instructions
 

  • Preheat oven to 350°F
  • Cut stems off strawberries and then puree – you should have about 1 1/4 cup of pureed strawberries
  • Combine all ingredients in bowl of a mixer and mix until combined
  • Scoop into prepared muffin tin
  • Bake 40-45 minutes, until center is set and a toothpick comes out clean
