Wild Rice, Brussel Sprouts and Chicken Salad
A hint of spring is in the air and this wild rice and brussel sprout chicken salad is giving me alllll the warm weather vibes. This dish is SO good both hot and cold. I prefer it cold, while David likes it better hot! This meal is seriously the best for meal prep. I will make a big batch on Sunday then pack it up in little containers and I am good to go for the week!
Wild Rice, Brussel Sprouts and Chicken Salad
Ingredients
- 1 lb chicken cooked and cubed
- 1 cup wild rice cooked in chicken broth
- 1 bag brussels shredded
- 8 oz mushrooms
- 1 onion chopped
- 1 tsp thyme
- 1 tsp garlic
- juice from ½ lemon
- salt and pepper to taste
Instructions
- Cook wild rice following package directions, using chicken broth instead of water
- Saute onion in olive oil and season with salt and pepper
- Add garlic and saute for about one more minute then add mushrooms
- When mushrooms are cooked, add a little more olive oil and then add brussel sprouts
- When brussels are cooked, add chicken and lemon juice then cook until chicken is warm, stirring occasionally
- Add wild rice when it is done and mix well
- Season with salt and pepper to taste
