Sweet Potato Pancakes
About a month ago, my cousin Rosy asked if I had a recipe for sweet potato pancakes and homemade maple syrup. I did not, so naturally my first instinct was to get testing! While I have yet to make a blog-worthy maple syrup (sorry dude), these these sweet potato pancakes just might be my new favorite fall breakfast.
Sweet Potato Pancakes
Ingredients
- ¾ cup sweet potato puree
- 2 eggs
- 1½ cups flour
- 2 tbsp light brown sugar
- 3½ tsp baking powder
- 1 tsp kosher salt
- 1½ cups milk
- ¼ cup butter melted & slightly cooled
- 2 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- 1½ tsp lemon zest
- 1 tsp vanilla
Instructions
- Combine ingredients until batter is smooth – add melted butter slowly while mixing as to no scramble the eggs
- Lightly grease griddle or large skillet with butter over medium high heat
- Drop 1-2 tbsp batter full onto griddle, being careful not to crowd, and let cook
- When pancake starts to bubble, flip with spatula and cook until underside is golden browned
