Sweet Potato Pancakes

About a month ago, my cousin Rosy asked if I had a recipe for sweet potato pancakes and homemade maple syrup. I did not, so naturally my first instinct was to get testing! While I have yet to make a blog-worthy maple syrup (sorry dude), these these sweet potato pancakes just might be my new favorite fall breakfast.

Sweet Potato Pancakes

Ingredients
  

  • ¾ cup sweet potato puree
  • 2 eggs
  • cups flour
  • 2 tbsp light brown sugar
  • tsp baking powder
  • 1 tsp kosher salt
  • cups milk
  • ¼ cup butter melted & slightly cooled
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • tsp lemon zest
  • 1 tsp vanilla

Instructions
 

  • Combine ingredients until batter is smooth – add melted butter slowly while mixing as to no scramble the eggs
  • Lightly grease griddle or large skillet with butter over medium high heat
  • Drop 1-2 tbsp batter full onto griddle, being careful not to crowd, and let cook
  • When pancake starts to bubble, flip with spatula and cook until underside is golden browned
