Spring Cobb Salad

This salad might actually be my favorite food at the moment. It is SO easy to make and it has literally been a weekly staple for the last few months in our house. It is so good that even David loves it! You can really put whatever you like in this salad, but my favorites include: grilled (or baked!) chicken, hard boiled eggs, ham, peas, corn and carrots! I also really like celery on this salad, but David will not eat celery so alas here we are. Feel free to give it a try if you are also a fellow celery lover!

Spring Cobb Salad

Ingredients
  

  • 1 lb chicken breast chopped
  • 1 ham steak chopped
  • What's Gaby Cooking Go To Blend
  • lettuce chopped
  • hard boiled eggs
  • carrots chopped
  • frozen peas
  • corn
  • bacon chopped
  • fried onions

Instructions
 

  • Season chicken breasts with Gaby's Go To blend to taste – I tend to go light since this is a bit peppery
  • Either grill chicken breasts until done or bake in oven at 350°F for about 30 minutes, until done
  • Cook frozen peas following package directions – I usually get the steamable bags then pop it in the microwave
  • If corn is already cooked, canned or frozen – microwave until warm otherwise, cook corn on grill or in pot until tender
  • Combine corn and peas and sprinkle with small pinch of kosher salt
  • Cut up chicken breasts and start assembling salad by topping lettuce with carrots, peas and corn, ham, bacon, chicken and halved or quartered hard boiled eggs
  • Top with fried onions and serve with salad dressing of choice – we always serve with homemade ranch (1 ranch packet, 1 cup fat free buttermilk and 1 cup full fat Duke's mayo)
