Easter Everything Cookies
I have been SO into these everything cookies lately. I just love the salty and crunchy addition of the potato chips (the Cape Cod chips work best – we LOVE reduced fat ones) and the gooey textures from the marshmallows. So. Good. With Easter right around the corner, I naturally had to make and Easter version of these little cuties: so I added fun Easter sprinkles and some pastel colored m&ms that I had and there you have it – Easter everything cookies! Also – HOW CUTE IS THAT PEEP NORA MINI?! I am OBSESSED. I love all my minis, but the peep is for sure my favorite. This recipe makes about 6-8 cookies, so I would double or triple it for a larger crowd.
Easter Cookies
Ingredients
- 1/2 cup AP flour
- 1/4 cup butter soft
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 egg
- 1/2 tsp baking powder
- 1/4 cup marshmallows
- 1/4 cup cape cod chips
- 1/8 cup Easter colored chocolate candies
- 1/8 cup Easter sprinkles
- 1/3 cup mini chocolate chips
Instructions
- combine butter and sugars, beating until fluffy
- add egg, molasses and vanilla, stirring to combine
- in separate bowl, combine baking powder, salt and flour
- slowly add dry mixture to wet
- add marshmallows, beating to incorporate
- fold in potato chips, candies, sprinkles and chocolate chips
- scoop out onto cookie sheet and chill for ~1 hour
- bake at 350°F for ~10 minutes
